One of Asia’s most celebrated chefs and a true master of Franco-Asian flavors, the multi-award winning Chef Justin will be demonstrating his unique approach to Asian-inspired Mediterranean cuisine at SCUSA from June 15–18.
Bali’s newest home of refined Mediterranean fare, SCUSA is the latest flagship restaurant of AYANA Estate in Jimbaran, the island’s largest integrated resort, and the 26th dining destination within the 90-hectare estate. Helmed by Chef de Cuisine Umberto Sbardella, who has led culinary programs at luxury hotels across the UAE and in his native Italy, and with a firm commitment to creating Bali’s most exceptional Mediterranean menu, SCUSA is the ideal restaurant to host Justin Quek for this captivating chef collaboration.
With accolades including Chef of the Year at the inaugural World Gourmet Summit Awards in 2001; San Pellegrino Chef of the Year in 2003 and 2004; and entry into the World Gourmet Summit Awards’ Hall of Fame in 2009, Chef Justin has revolutionized Singapore's dining scene, placing it on the global gastronomic map and inspiring a new generation of chefs. Over the past three decades, he has honed his craft at prestigious venues such as Singapore’s Mandarin Oriental and The Oriental, and worked in renowned Michelin-starred restaurants across Europe.
His illustrious career now sees him as chef-owner of two restaurants housed in one of Singapore’s most prestigious buildings, Marina Bay Sands. Chinoiserie is a fine dining establishment serving Asian food prepared with high-end French culinary touches, while JustIN Flavours of Asia is an all-day casual restaurant plating up regional favorites for discerning palates. During his collaboration with SCUSA from June 15–18, diners can select from Chef Justin’s specially-crafted six-course set dinner menu, à la carte, or for those enticed by a VIP experience, a bespoke sit-down dinner with the chef himself.
For his collaboration with SCUSA, Chef Justin has created a diverse yet harmonious series of dishes that captures the essence of Bali’s extraordinary seafood and fresh produce. Diners can look forward to dishes such as saffron scented smoked fish veloute; lobster poached in Greek style court bouillon; crabmeat sautéed with a touch of harissa and shellfish oil; and wild grouper carpaccio. In honor of his Singaporean heritage and the city-state’s beloved hawker culinary heritage, Chef Justin’s famed fish curry and prawn ramen soup will also be available at AYANA Segara Bali’s all-day dining restaurant Karang, giving diners the chance to experience his delectable Asian classics day and night.
